Morning Pep Organic coconut flour is made from certified organic fresh coconut. After separating the rich, White coconut meat from its shell we use pressurized steam to remove most of its fat. We thoroughly dry the defatted coconut before milling it to a fine cream colored flour.     We eat gluten and dairy free and it’s hard to find good quality flours that have the same texture. I love making banana cinnamon coconut flour pancakes, they have a great flavor and texture to them. They are high in fiber and protein and are delicious, even my picky 4 yr old eats them. Looking forward to using the almond flour.

    I haven’t baked with almond flour in so long! I woendr sometimes if I eat too much almond between almond milk and almond butter and am going to be on almond overload But your right it does lend a naturally sweet, nutty taste. These look a little too hard’ on the outside, and I prefer a soft cookie, but I’ll give them a go!Are you mostly motivated by page hits and views on your blog? You seem to mention it quite a few times. Not that there’s anything wrong with it, just curious.

    I’m trying to get off wheat and sugar, so I’ve been lnkoiog for a starter recipe using almond flour, this one turned out pretty well, despite a lot of substitutions I used half chickpea flour, I added cocoa instead of chocolate chips, subbed earth balance for the fat and sweetened with a little coconut sugar and stevia. Still pretty delicious, so thanks great recipe, really simple and flexible!
