Ingredients:
10-12 medium apples, quartered (skin on)
1 gallon water
2 cinnamon sticks
1 teaspoon whole cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Monk fruit sweetener, to taste
Instructions:
Combine Ingredients: In a large stockpot, combine the quartered apples, water, cinnamon sticks, cloves, nutmeg, and ginger.
Simmer: Bring the mixture to a boil over high heat, then reduce heat to low and simmer, covered, for 2-3 hours, or until the apples are soft and the liquid is fragrant.
Strain: Strain the liquid through a fine-mesh sieve or cheesecloth to remove the apple pulp and spices.
Sweeten with Monk Fruit: Add monk fruit sweetener to the strained cider to your desired sweetness level. Taste and adjust as needed.
Serve: Serve hot or chilled.
