Ingredients:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup Morning Pep's monk fruit sweetener
- 1/4 cup molasses
- 1 large egg
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter and monk fruit sweetener until light and fluffy. Beat in the molasses and egg until well combined.
- In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out shapes using cookie cutters.
- Place the cookies on the prepared baking sheets, leaving space between them.
- Bake for 8-10 minutes, or until the edges are lightly browned.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
